Baja Fish Tacos started with a single truck and a single belief: the world's greatest fish taco shouldn't be hard to find. We took the recipes our family has cooked along the Baja California coast for generations — beer-battered fish, hand-shredded cabbage, crema, lime — and put them on wheels.
From Baja to the Block.
Two more trucks are rolling out across the Southwest. Brick & mortar locations are next — flagship in San Diego, then Las Vegas, then East Coast. International? Cabo first. Then we keep going. Wherever there's a hungry block, we want a Baja truck on it.
No Shortcuts. Ever.
Fish hand-battered to order. Tortillas pressed daily. Lobster real, never frozen. Fried chicken brined overnight. Steak marinated in citrus and chiles. The truck moves fast — the food doesn't.
